Is there any sort of device or way to have my laptop and desk top synced so that anything I save on one automatically goes to the other?  Except pics and videos -

The answer is yes and no.  Many things can sync between computers such as contacts, calendars, music (with the purchase of iTunes Match) documents using Dropbox, documents using Pages, Numbers, Keynote, email.  Pictures do not currently sync exactly between iPhoto libraries.  This may change in January when Apple releases iPhoto iCloud library however the jury remains out on whether that will be a great service or not.
